CAULIFLOWER & POTATO CURRY

Serves 4

Recipe Ingredients

3 tbsp vegetable oil

2 potatoes, peeled and cut into wedges

1 cauliflower, trimmed and cut into small florets

1 tsp Bart Black Onion Seeds

2 Bart Cloves

2 Bart Cardamom Pods

1/2 Bart Cinnamon Stick

1 Bart Bay Leaf

1 tsp Bart Ground Cumin

pinch of Bart Chilli Powder

1 tsp salt

1 tsp sugar

300ml water

2 tomatoes, cut into wedges

200g natural yogurt, lightly whisked

3 tsp Bart Coriander in Sunflower Oil

1 tsp Bart Garam Masala

Preparation Instructions

1. Heat the oil in a large frying pan and lightly fry the potato and cauliflower, turning for 3-5 minutes.  Remove from the pan and set aside.

2. Add the onion seeds, cloves, cardamom, cinnamon and bay leaf to the oil remaining in the pan and cook gently for 1-2 minutes until the spices begin to crackle.

3. Return the potaotes and cauliflower to the pan and add the cumin, chilli, salt and sugar.  Mix well and add the water.  Bring to the boil, reduce the heat and simmer for about 20 minutes until the potatoes are just cooked.

4. Add the tomatoes and yogurt, bting to a simmer and cook for 5 minutes.

5. Add the coriander and sprinkle with garam masala to serve.
