Thai Chicken Curry

Method

  1. Cut the chicken breast into 2.5 cm cubes.
  2. Heat the oil in a wok or heavy pan, add the sliced spring onions and the chicken. Stir fry until the chicken is opaque.
  3. Stir in the green Thai curry paste, coconut cream and salt to taste.
  4. Simmer, uncovered for 5-10 minutes until the chicken is cooked.
  5. Stir in the coriander.
  6. Serve with rice and green salad.
