Thai Chicken Curry

Method
- Cut the chicken breast into 2.5 cm cubes.
- Heat the oil in a wok or heavy pan, add the sliced spring onions and the chicken. Stir fry until the chicken is opaque.
- Stir in the green Thai curry paste, coconut cream and salt to taste.
- Simmer, uncovered for 5-10 minutes until the chicken is cooked.
- Stir in the coriander.
- Serve with rice and green salad.
