These olive green coloured pods from Guatamala give a rich sweet aroma and a warm, lemony flavour. When opened the pod reveals three segments each with a row of tiny brownish/black seeds. A key ingredient in Indian curries and pilau. Cardamom can also be used to make desserts such as almond ice cream.
